Rich Coffee

Arno Holschuh is not timid about telling people the right way to make coffee, and here’s why: Beans exhale CO2. After all you’ve been through with coffee, you didn’t know that, did you? Holschuh is the service tech at Blue Bottle Coffee, and he makes sure that Blue Bottle grinds are exhaling like a rainforest when they’re blooming in water just this side of boiling. Find out what all that means at his lecture, “Microroasting Organic Coffee,” which he presents May 28 as part of the Bay Area food history exhibit, “From Earth to 5-Star.” The exhibit features a sort of diorama of Bay Area food history, detailing the roots of our famous food legacies as well as the musings of our famous food people, and features daily presentations from people like Holschuh. Remaining talks include Beth Setrakian from Beth's Fine Desserts (today at 2 p.m.), Christine Morrissey from Morrissey Egg Farm (3:30 p.m.), and Lora Kellner from Sloat Garden (May 30), among others. Though light on images and heavy on text, the exhibit does have a potent lure: It takes place in the Old Mint, which is open exactly never. Our advice: Go downstairs and visit the vaults, every one of them, and sit for a while in the room with the gold ore stamp mill, which will make you feel like you have a horse and a mustache. Then get back upstairs and wrangle with food history.
