Grilled Pork Chops With Yams and Brussels Sprouts
The menus at these three excellent family restaurants change seasonally, but we were especially enamored of this fine plate of food. The Niman Ranch pork chops had been brined, so they were very moist and juicy; the baked yams had been dusted with grated orange; and the Brussels sprouts were sautéed with chunks of pancetta and apple.
