Crab and grits, The Front Porch

Brillat-Savarin once said, "The invention of a new dish is of greater importance to the happiness of mankind than the discovery of a new star." And for us the star of the menu at the Front Porch is the Dungeness crab atop sweet white corn grits porridge. We love their deep-fried chicken livers saturated with onion gravy on brioche toast, too, but we've had deep-fried chicken livers before. We've never had the combination of textures and flavors that still haunt us, months later: sweet silky lump crab, heated with pepper, sharpened with lemon juice and shallots, generously piled atop a creamy porridge made from white corn grits. The last bite was as exciting as the first. It's a dish we dream about.
