The First Church of the Last Laugh celebrates every April Fools' Day with the St. Stupid's Day Parade, in which people dress up in silly costumes and, well, louis vuittonact stupid. But it's all in the name of good fun.

As veritable pho-natics, we've sampled most of the fancy pho this city has to offer, which led us to the conclusion that pho shouldn't really be fancy at all. South Vietnam–style pho is already packed with delicious ingredients and doesn't require much spicing up, so to all you pho enhancers: Stop complicating an already flawless meal. At My Canh, a family-owned hole-in-the-wall that's open until 2 a.m. every day, the rare steak, fresh basil, lime, chile, beansprouts, and scallions stand for themselves. The broth is sweet but does not call too much attention to itself, and somehow My Canh always gives you the perfect portion to satisfy without overloading. Also, it's fast and cheap. More often than not, your $5.95 bowl of rare steak pho (pho tai) will be out in five minutes, and it's so good you'll wish you could eat it for five hours.
