First things first: Why is it called a salon? Because it is not enough to simply like chocolate — you can go to a supermarket candy aisle for that. The vendors here are artists, and you are a connoisseur. Tip: If you can't talk properly about chocolate, say, "Mmmm." Everyone does. You get the chance to, because many of the vendors — this year, there were more than 50 of them — offer samples. Of course, it's not polite (or permitted) to bring a tub to store treats for later, but who's to say what the plastic bag stuffed in your pocket is for? Vendors come from around the world, but we like the locals, like XOX Truffles and Neo Cocoa, the latter a salon newcomer and 2009 Best Truffle winner. Go, home team! Mmmm.
