Chef Ron Siegel of the Dining Room at the Ritz-Carlton accompanies a 64-degree quail egg with caviar and serves it on a plastic-wrap-covered bong filled with cedar smoke, which is released as the dish is eaten. While there's an acknowledged novelty element at play, the dish is still seriously good. At least Siegel didn't name the dish the Freak or the Franchise.
