Delicious vegan fare and food trucks may seem like polar opposites, but while fatty and meaty describe the bulk of street food offerings, KoJa Kitchen, a truck that combines Korean and Japanese cuisine, successfully shows how delicious meat-free can be. Its Tofu Teriyaki Zen ($5.25) is composed of a glazed Portobello mushroom and tofu patty with a ring of pineapple and a pinch of shredded lettuce. While that description may not have you jumping out of the pork belly taco line, consider that this is no ordinary sandwich. The buns are two crisped discs of rice, somewhere in between the Japanese seasoned onigilly and the golden crisp rice found at the bottom of hot stone bowls of bibimbap, and are tender yet able to soak up sauces without collapsing. Even better is the satisfying tofu patty that doesn't even try to imitate meat. If you can't live without meat, add a side of Kamakizi Fries ($5.75, criss-cut fries, Korean BBQ beef, sautéed onions, kimchi, green onions, signature sauce, Japanese mayo), but chances are you won't even miss it.
