The San Francisco dining universe has always been in flux, but while tastes certainly shifted between the opening of the Tonga Room and the heyday of Jeremiah Tower’s Stars, never before has the restaurant scene been so closely tied to the fortunes and identity of the city itself. From the impact of a living wage on a family restaurant’s bottom line to the total transformation of marginal neighborhoods into dining destinations, food is remaking San Francisco just as much as San Francisco sets trends in food.
[jump] With that in mind, CUESA (the Center for Urban Education about Sustainable Agriculture) is presenting a panel discussion, Evolving City, Evolving Restaurants, at the Ferry Building’s Port Commission Hearing Room next Tuesday, April 21. For all the talk about a minimum wage destroying the SF's prosperity or techies laying waste to everything pure and good, it’s time to hear from the experts.
Moderated by Eater SF editor Allie Pape, CUESA is bringing together Erin Archuleta (ICHI Sushi + NI Bar), Joe Hargrave (Tacolicious, Mosto, and Chino), and Thad Vogler (Bar Agricole, Trou Normand) for this lively talk on the satisfactions and difficulties of managing a food business, along with all the ramifications for the wider city.
