Suddenly discovering you have a gluten allergy can make you feel like Pride and Prejudice's Elizabeth Bennett, realizing at long last that it's Mr. Darcy who gets her crinoline all stiff. It can be liberating.

Next Monday, Tartine Bakery vet Julieann Moore will lead a class at Hands On Gourmet in Dogpatch that promises to reveal the obscure properties of gluten-free flours in the construction of goodies such as key lime tartlets, chewy chocolate chip cookies, and Black Forest cake with balsamic sour cherries. After the three-hour class, you'll walk with a batch of gluten-free flour mix, and notes for turning it into home-baked indulgences. Perfect for nibbling during epic sessions spent re-reading your dog-eared Jane Austen paperbacks, confident that the only air that'll escape you afterwards will come in the form of sighs.
