15 Romolo's Rising Sun Cocktail

Number 28: The Rising Sun from 15 Romolo

Scott Baird and Aaron Smith's rejiggered 15 Romolo has developed magnetic powers, bringing North Beach haters to Broadway to dart into the dim bar, which hits the perfect balance of Barbary Coast and design boutique, flavored with a few drops of rockabilly dive. The bartenders switch up their featured drinks frequently, so there's no guarantee you'll find the Rising Sun on your next visit, but it emblemizes their mix of modern ingredients and classic sensibilities. Tilt the glass to your lips, and the scent of orange zest arrives first, followed by a whiff of peat smoke and the foreshadowing of chocolate. But this is no chocotini. A few drops of the bartenders' cacao-nib tincture only heightens the malty kick of the Pig's Nose scotch, which they soften up with sherry's caramel-nut tones and then tweak with the witchy spice and fruit of Maraschino liqueur. Your great-grandfather may not have recognized most of the ingredients in the Rising Sun, but he'd surely have downed the cocktail and demanded a refill.
