Saltado de Pollo from Mi Lindo Peru

Number 9: Saltado de Pollo from Mi Lindo Peru

Let us declare, and categorically, that everything tastes better with French fries. Chili. Chicken nuggets. Mayonnaise. Chicken stir-fry ― aka saltado de pollo.

There's no secret why San Franciscans love Peruvian food so much: all that fresh seafood, those sauces based on fruity aji and rocoto chiles, every other dish packed with potatoes and corn. Mi Lindo Peru predates the trend, and while places like La Mar and Limón have earned our respect for their nuevo-Andean food, Mi Lindo Peru has earned our loyalty for its giant plates, friendly waiters, and hearty food.

The saltado de pollo (and the lomo saltado, with beef instead of chicken) is simply chicken strips and French fries tossed around in a wok with onions and tomatoes, everything glazed with a splash of soy sauce and then garnished with green onions and cilantro. The dish dates back to the 19th century, when Chinese immigrants settled in Peru. "Chifa" cuisine is as popular in Lima as General Tso's chicken is in San Francisco. (Come to think of it, saltado de pollo might be as popular in San Francisco as General Tso's chicken is.)

Thrill-seekers can see how many drops of the chile-onion sauce, served on the side, they can douse the dish with before requiring a second bottle of Cusquena beer to clear out the heat. The rest of us, who eat it straight, this Chinese-Peruvian dish is a surprising taste of home.
