Last summer, the Dissident Chef relaunched his SubCulture Dining collective in both San Francisco and New York. This month, he's hosting a series of intimate S.F. dinners dedicated to one of his most beloved animals, the duck.
As a word-of-mouth underground club, Sub-Culture Dining preceded the pop-up wave of the last few years and allowed the Dissident Chef to showcase bold ideas while dreaming up a permanent vision. Now, with the advancement of food blogs and social media on this go-round it's a little bit easier to find to stay connected.
Member applications are still being accepted on his site; once you join the online community, you'll have access to reservations as well as the SCD Larder, an occasional shop for special artisan food goods. The next available dinners are on December 15 and 21; each will serve 15-plus duck-focused courses to just eight diners for $199.
The Dissident Chef has never previously revealed menus beforehand, but he credits the spirit of change for this latest iteration of SubCulture Dining and has hinted that one course might be duck eggs with yeast, barley, smoked dashi and uni crisp and another might be skinless ravioli of duck rillette, duck brodo, and foraged greens. The location will stay a secret until right before the event, but he has promised it will be within city limits.
This is both a rebirth and a return to roots for the Dissident Chef, also known as Russell Jackson, who shuttered his S.F. restaurant Lafitte in April and moved to New York. "This is just the beginning of a new wave. A new personal journey. An artistic path," he says.
