Carnivores, rejoice: Fatted Calf is an artisanal butcher counter in Hayes Valley that sells Taylor Boetticher's hand-made charcuterie as well as fresh meats and a few upscale-deli staples. His staff are trained in contemporary butchery, which means they can provide detailed answers when you ask where your pork products come from and offer recipes, to boot. (The store also hosts a meat happy hour on Wednesdays and regular butchery classes.) Many of the people picnicking in the park down the street are staring lovingly into the heart of the store's meatloaf sandwich, a combination of pork, beef, house-cured bacon, and caramelized onions.
