The of-the-moment gimmick at this chic, sophisticated small restaurant (in the Mark Twain Hotel) is that almost all its ingredients are sourced within a hundred miles of its front door. Luckily its front door is near central California, and our superb local ingredients are handily turned into food as chic and sophisticated as Fish & Farm’s decor — and the New American cuisine is also delicious. Favorite dishes include a creamy seafood chowder, salt-cod fritters topped with a poached egg, the Fish & Farm plate (a changing assortment of house-cured fish and meats) among the starters; mains of sautéed sablefish with mustard-braised cabbage and slow-cooked lamb shoulder; and persimmon bread pudding with cinnamon sabayon. If it’s this good with winter ingredients, it will only get better in spring, summer, and fall. - Meredith Brody
