Fatted Calf Charcuterie

San Francisco is crazy about live butchery demonstrations — they're practically a spectator sport at foodie events, and at Fatted Calf, cocktail hour entertainment. Step into Hayes Valley upscale butcher shop on any Wednesday between 5:30 and 7 p.m. to see the skilled staff break down portions, halves, or whole pigs. As you watch them use hacksaws and boning knives to deftly slice between meat cuts — explaining what they're doing along the way, of course, and in the process giving you a better idea of where your meat comes from in relation to the animal — you can peruse the deli counter, sip local wine and beer, and nibble on salty meats. Make sure to pick up a few of the excellent cured meat sticks for later snacking.
